Why is my Blob Track threshold uneditable? The warning is just because I’m on the non-commercial license, but hoping to buy a license if I can get some issues worked out!

the Threshold parameter becomes available once a background is supplied via the second input:
Threshold
threshold- Threshold used to create the binary texture when using background subtraction. It is the threshold of the difference between the background texture and the input texture.
